Where are you Lao Shan ? I miss you 
I remember the first time I saw it, it was a big surprise (no pun intended) for me. Such a great beast and a lot of fun fighting his endless walking, hahaa !
Ahh, when the music started when he entered the last map... such memories...
I don't remember well, but I read that the Lao Shan you're fighting is a young one and there are bigger guys living ! And the fact they actually flee the Fatalis was enormous. Imagine, this mountain is crushing over by a simple dragon ? I was terrified D:
And then, Fatalis blow up my face and all the things were clear.

There are a lot of theories about the Lao. Regardless of how you slice it though, the proof that they get bigger involves the largest of the Carapaceons: the Shen Gaoren. If you've ever fought the Shen Gaoren you'll notice that the skull on his back is a Lao skull, and that it is MUCH larger than the head of the Lao you fight. So, without much of a jump, a Lao would get at least that much bigger by adult size, if not larger.
There are some that theorize the Lao keeps growing indefinitely, but there's no real proof of that yet
